Have you ever wanted to capture the essence of summer in a jar?

Choose a food-grade container, such as glass, ceramic, or food-grade plastic, to build your Rumtopf.
For a larger vessel, preferably 2 to 3 gallons, to showcase the layers of fruit, use a big glass jar like a glass cookie jar. Alternatively, quart-sized jars can be used for miniature Rumtopfs.
Thoroughly clean the chosen container with hot, soapy water, rinse it multiple times with boiling water, and finally rinse with a small amount of rum.
Begin by adding the first fruit into the container, then sprinkle 1 cup of sugar on top for every pound of fruit.
Pour enough rum into the container to cover the fruit by 1 inch.
Continue layering different fruits as they come into season, ensuring each layer is covered with enough liquor to prevent fermentation.
If bubbles start to appear, add a small amount of 151-proof rum (overproof rum) to stop fermentation.
Allow the Rumtopf to rest for a minimum of 4 to 6 weeks after adding the last fruit.
To serve, use a ladle to scoop out the Rumtopf, which can be enjoyed with ice cream or served alongside roast meats. Remember that the dish contains a significant amount of rum and is intended for adults only.
If the liquid level gets too low and threatens to go below the fruit, strain the remaining liqueur, let it settle
