  • 1 stick (8 tablespoons) of melted unsalted butter
  • 2 tablespoons of sugar
  • A pinch of fine salt
  • Three 11.5-ounce containers of whipped cream cheese
  • 1 and 1/4 cups of sugar
  • One 16-ounce container of sour cream , at room temperature
  • 1 cup of heavy cream
  • 4 large eggs , at room temperature
  • 1 teaspoon of vanilla extract
  • Juice from 1/2 lemon
  • 1 teaspoon of red gel food coloring (adjust amount for desired color)
  • 1/2 teaspoon of blue gel food coloring (adjust amount for desired color)

Instructions

  • Place the oven rack in the middle position and preheat the oven to 325 degrees F.
  • For the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and salt. Mix well. Press the mixture into the bottom of a 10-inch springform pan. Bake for 15 to 18 minutes, or until golden brown. Allow the crust to cool completely.
