  • 2 cups of heavy cream
  • 1 cup of packed brown sugar
  • 6 large egg yolks
  • 1 teaspoon of pure vanilla extract

  • 1/2 teaspoon of ginger
  • 1/2 teaspoon of nutmeg
  • 1/4 teaspoon of kosher salt

  • The day before you plan to churn the ice cream, place the bowl of your ice cream maker in the freezer to freeze.
  • In a medium saucepan, combine the pumpkin puree, milk, and cream. Whisk the mixture together over medium heat until it begins to boil. Remove from heat and set aside.
  • In a large bowl, whisk together the brown sugar and egg yolks until they become pale and thick ribbons form. This should take around 3 to 4 minutes. Alternatively, you can use a hand mixer.
