  • Ingredients:
  • 6 tablespoons melted unsalted butter
  • Additional butter for greasing the pan
  • 9 chocolate graham crackers (approximately 1 sleeve)
  • 2 tablespoons sugar
  • Pinch Pinch of fine salt
  • Filling:
  • Four 8-ounce packages of cream cheese (, softened)
  • 1 1/4 cups sugar
  • 1 cup sour cream
  • 6 large eggs (, at room temperature)
  • 1 tablespoon pure vanilla extract
  • Topping:
  • 1 cup pecans
  • 1/2 cup heavy cream
  • 1 tablespoon unsalted butter
  • 1 tablespoon light corn syrup
  • 1 teaspoon pure vanilla extract
  • 1/2 cup sugar
  1. Preheat the oven to 325 degrees F and position the rack in the center. Butter the inside of a springform pan.
  2. Use a food processor to finely grind the graham crackers. Add the butter, sugar, and salt to the processor and pulse until the mixture comes together and holds its shape when squeezed.
  3. Pour the mixture into the prepared pan and press it into the bottom to create an even layer. Bake for about 10 minutes until the crust is just firm. Let it cool completely.
  4. Place the pan on a large piece of foil and fold the foil up the sides of the pan to seal it and keep water out while baking.
  5. Clean the food processor and pulse the cream cheese, sugar, and sour cream together until completely smooth. Scrape down the sides of the bowl as needed.
  6. Add the eggs and vanilla to the processor and pulse until incorporated. Pour the filling into the crust and set the pan inside a roasting pan.
  7. Fill the roasting pan with enough hot water to go halfway up the sides of the springform pan, but not above the foil.
  8. Bake the cheesecake for 1 hour 10 minutes to 1 hour 20 minutes until the edge is set but the center jiggles slightly. Turn the oven off, open the door briefly to let out some heat, then close the door and let the cheesecake sit in the oven for an additional 1 hour.
