The Magic of ‘Nduja

Have you ever wondered what makes ‘nduja so special? This spicy spreadable salami from Calabria, Italy, is a true flavor bomb. It’s made by combining ground pork, chili peppers, and a variety of spices, resulting in a fiery and smoky taste. ‘Nduja adds a unique depth and complexity to any dish, making it perfect for spicy food enthusiasts.

The Perfect Marriage: Tomato and ‘Nduja

Imagine a harmonious union between the sweetness of tomatoes and the spiciness of ‘nduja. It’s a match made in culinary heaven! The acidity of the tomatoes beautifully balances the heat from the ‘nduja, creating a sauce that is both savory and fiery. This combination brings an explosion of flavors to your pasta dish, leaving you craving for more.

Preparing the Sauce

Now that you’re acquainted with the star ingredients, let’s dive into the preparation process. It’s surprisingly simple! Start by heating some olive oil in a pan and sautéing garlic and onion until golden brown. Next, add the ‘nduja and let it melt, releasing its aromatic oils. The spicy aroma will fill your kitchen, making your mouth water in anticipation.

The Tomato Tango

Once the ‘nduja has melted, it’s time to add the star of the show – the tomatoes. You can use fresh or canned tomatoes, depending on what’s available. Crush the tomatoes with a fork or use a blender for a smoother texture. Pour them into the pan with the ‘nduja mixture and let the flavors meld together. The sauce will gradually thicken, intensifying the flavors as it simmers.

Cooking the Pasta

While the sauce is simmering, it’s time to cook the pasta. Choose your favorite type of pasta, whether it’s spaghetti, penne, or fusilli. Boil water in a large pot, add salt, and cook the pasta until al dente. Remember, al dente pasta has a slight bite to it, offering a delightful texture contrast to the sauce. Drain the cooked pasta and set it aside, ready to be coated in the luscious ‘nduja-tomato sauce.

Bringing It All Together

Once the pasta is cooked and drained, it’s time to unite it with the tantalizing ‘nduja-tomato sauce. In a large pan, combine the cooked pasta and the sauce, tossing them together until every strand is coated in the spicy goodness. Feel free to add a sprinkle of grated Parmesan cheese for an extra touch of indulgence. Serve it hot and watch as your guests marvel at the explosion of flavors on their plates.

Conclusion

Pasta with spicy ‘nduja-tomato sauce is a dish that brings together the best of both worlds – the richness of tomato sauce and the fiery kick of ‘nduja. The marriage of these two ingredients creates a symphony of flavors that will leave you satisfied and wanting more. So, the next time you crave something spicy and comforting, give this recipe a try. Your taste buds will thank you!

Frequently Asked Questions (FAQs)

Q1: Where can I find ‘nduja?

A1: ‘Nduja can be found in specialty Italian delis or online gourmet food stores. However, if you can’t get your hands on ‘nduja, you can try substituting it with a combination of spicy salami and chili flakes to achieve a similar flavor profile.

Q2: Can I make the sauce less spicy?

A2: Absolutely! If you prefer a milder version, you can reduce the amount of ‘nduja or use a mild variety. You can also balance the heat by adding a bit of cream or a dollop of mascarpone cheese to the sauce.

Q3: What pasta shape pairs best with this sauce?

A3: This spicy ‘nduja-tomato sauce goes well with a variety of pasta shapes. However, shorter pasta shapes like penne, rigatoni, or fusilli tend to capture the sauce in their nooks and crannies, creating a delightful burst of flavors in every bite.

Q4: Can I freeze the sauce for later use?

A4: Yes, you can! This sauce freezes well, allowing you to enjoy its flavors on a later date. Make sure to cool the sauce completely before transferring it to an airtight container or freezer bag. It will stay fresh for up to three months in the freezer.

Q5: Can I add vegetables to the sauce?

A5: Absolutely! Feel free to experiment and add your favorite vegetables to the sauce. Bell peppers, zucchini, or mushrooms are excellent choices that complement the flavors of the ‘nduja-tomato sauce.

Q6: Is this dish suitable for vegetarians?

A6: Unfortunately, this particular recipe is not suitable for vegetarians as it contains pork-based ‘nduja. However, you can create a vegetarian version by substituting the ‘nduja with a spicy vegetarian sausage or plant-based protein alternative.

Q7: Can I make the sauce in advance?

A7: Absolutely! In fact, the flavors intensify when the sauce is allowed to sit and meld together overnight. You can prepare the sauce a day or two in advance, store it in the refrigerator, and reheat it when you’re ready to serve. It will be bursting with flavors!

Q8: Can I adjust the spiciness level?

A8: Of course! The spiciness level is adjustable based on your preference. If

  • 1 tbsp (15ml) olive oil
  • 2 shallots (, thinly sliced)
  • Salt
  • 1 bottle (24.5oz; 700g) tomato passata
  • 4 oz (115g) ‘nduja
  • 1 lb (450g) dried ziti (, candele (broken into 3-inch pieces), or other short tubular pasta)
  • 2 oz (60g) finely grated Pecorino Romano cheese
  1. Heat olive oil in a large skillet over medium heat until it shimmers. Add shallots, lightly season with salt, and cook until softened, about 5 to 7 minutes, stirring frequently.
  2. Add passata to the skillet, making sure to use all the tomato in the bottle. Add 1/4 cup (60ml) water to the empty bottle, close the lid, shake it, and pour the tomato-water mixture into the skillet. Bring to a simmer, lightly season with salt, and cook until the sauce slightly thickens, about 12 to 15 minutes, stirring occasionally.
  3. Add ‘nduja to the sauce and use a wooden spoon to break it up and stir it in. Cook, stirring constantly, until the ‘nduja is fully incorporated into the sauce, about 1 minute.
  4. Meanwhile, cook the pasta in a pot of salted boiling water until it is slightly softened on the outside but still uncooked in the center (about 3 minutes less than the package instructions). Using a spider skimmer or a colander, transfer the pasta to the sauce along with 1/2 cup (120ml) of the pasta cooking water. If using a colander, make sure to reserve at least 1 cup (240ml) of the pasta cooking water.
  5. Increase the heat to high and cook, stirring and tossing rapidly, until the pasta is al dente and the sauce thickens and coats the noodles
