  7. Once the wort reaches 45°F, aerate it and add the yeast.

  8. Allow the wort temperature to rise to 50°F and hold it there for three days. Then raise the temperature to 60°F and hold it for another three days for a diacetyl rest. After that, decrease the temperature by 1°F per day until it reaches 34°F. At this point, you can either bottle or keg the
