  • 2 big eggs
  • 1 tbsp sesame oil
  • 2 tsp finely grated fresh ginger
  • 2 tsp finely grated garlic
  • 1/3 cup thinly sliced green leek
  • 1 1/2 cups thinly sliced cabbage
  • 1/2 cup enoki mushrooms
  • 4 oz refrigerated fresh ramen noodles
  • 3 cups water
  • 2 tbsp miso paste
  • 1 tbsp soy sauce (or adjust to taste)
  • 1 tsp black sesame seeds (or adjust to taste)
  • 2 tbsp sliced green onion (or adjust to taste)


  • Begin by cracking the eggs into a nonstick skillet placed over medium heat.
  • Cook the eggs until the outer edges become opaque, which should take about 1 minute.
  • Flip the eggs once and continue cooking until the whites are completely set, approximately 3 minutes.
  • Set the cooked eggs aside.
  • In a saucepan, heat the sesame oil over medium heat.
  • Add the ginger, garlic, leek, cabbage, and mushrooms to the pan and cook until fragrant, around 1 minute.
  • Stir in the miso paste.
  • Gradually whisk in the water and bring the mixture to a boil.
  • Add the ramen noodles to the pan.
  • Reduce the heat and let the noodles simmer until they soften, about 3 minutes.
  • Season the dish with soy sauce.
