Ingredients
  

  • 2 tablespoons of extra-virgin olive oil
  • 1 medium yellow onion , chopped
  • 2 celery stalks , chopped
  • 2 cups of chopped carrots
  • 6 kale leaves , chopped
  • 4 garlic cloves , minced
  • 1 (14-ounce) can of diced fire-roasted tomatoes
  • ¾ cup of uncooked green lentils
  • 2 tablespoons of white wine vinegar
  • 12 sprigs of fresh thyme
  • teaspoons of sea salt
  • Heaping ½ teaspoon of ground cumin
  • Freshly ground black pepper , to taste
  • 6 cups of vegetable broth
  • Red pepper flakes , to taste
  • ½ cup of chopped fresh parsley
  • Grated Parmesan , to taste
  • Crusty bread , for serving

Instructions
