  • 3/4 cup of extra-virgin olive oil
  • 1/4 cup of white wine vinegar
  • 1/4 cup of fresh lemon juice
  • 3 tablespoons of Dijon mustard
  • 2 tablespoons of honey
  • 1 garlic clove
  • 1/2 teaspoon of sea salt
  • 1/4 cup of Parmesan cheese
  • 2 cups of cooked chickpeas
  • 3 curly kale leaves
  • 6 Brussels sprouts
  • 1/2 cup of thinly sliced radicchio
  • Shredded Parmesan cheese (amount not specified)
  • 1 ripe avocado
  • 4 extra-large tortillas

Instructions
