  • 1 tbsp unsalted butter
  • 1 small onion , finely chopped
  • 4 cups cooked chicken breast , cut into cubes
  • 1 can (15.25 oz) black beans , rinsed and drained
  • 1 can (15.2 oz) corn kernels , drained
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 can (10 oz) diced tomatoes and green chiles (such as RO*TEL®) , with their liquid
  • 1 can (4 oz) chopped green chilies
  • 1 package (4 oz) cream cheese
  • 1/3 cup fresh cilantro , chopped
  • 2 cups shredded Cheddar cheese
  • 1 bag (10 oz) chili and cheese flavored corn chips (such as Fritos® Chili Cheese® Corn Chips)


  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large saucepan, melt the butter over medium heat. Cook the onion until softened, approximately 5 minutes.
  • Add the chicken, beans, corn, cream of chicken soup, tomatoes and chiles (including the juice), green chiles, cream cheese, and cilantro. Cook until the cream cheese has melted, around 5 minutes.
  • Spread one-third of the chips on the bottom of a 9x13 inch rectangular casserole dish. Layer with half of the chicken mixture. Top the chicken mixture with one-third of the shredded Cheddar cheese. Repeat this layering process. Finish the second layer with the remaining one-third of the chips and Cheddar cheese.
  • Bake in the preheated oven for approximately 30 minutes or until the cheese has melted and is lightly browned.
