In a large bowl, combine 3 tablespoons of salt, hot pepper sauce, and 8 cups of hot water. Whisk until the salt dissolves.
Place the bowl in the freezer and chill for approximately 30 minutes until the mixture is cold.
Place the catfish in the brine, ensuring it is fully covered. Cover the bowl and refrigerate for 3 hours.
In a medium bowl, whisk together cornmeal, the next 5 ingredients, and the remaining ¾ teaspoon of salt.
Attach a deep-fry thermometer to the side of a 10 cast-iron skillet or any other large heavy skillet.
Add enough oil to the skillet so that it comes up a little less than halfway up the side. Heat the skillet over medium heat until the thermometer reads 335°.
Rinse the catfish and pat it dry.
Dredge each piece of catfish in the cornmeal mixture, shaking off any excess.
Working with 2 fillets at a time, fry the catfish in the heated skillet, turning halfway through, until it turns golden brown and crispy. This should take approximately 10-12 minutes per batch.
Once fried, transfer the fish to paper towels to drain any excess oil.
