  • 2 large eggs
  • 2 tbsp water
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs , seasoned with Italian herbs
  • Salt and black pepper , to taste
  • 2 large eggplants , peeled and sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 48 oz chunky tomato sauce (e.g. , Prego® brand)
  • 2 cups shredded mozzarella cheese


  • Preheat the oven to 375 degrees F (190 degrees C).
  • Grease 2 baking sheets and a 9x13-inch baking dish with 1 teaspoon olive oil.
  • In a shallow dish, whisk together eggs and water.
  • In a separate shallow dish, combine Parmesan cheese, bread crumbs, salt, and pepper.
