  • 3 tbsp of olive oil
  • 1 big onion , finely chopped
  • 1 bunch of green onions , finely chopped
  • 2 cloves of garlic , finely minced
  • 2 lbs of spinach , washed and finely chopped
  • ½ cup of freshly chopped parsley
  • 1 cup of crumbled feta cheese
  • ½ cup of ricotta cheese
  • 2 large eggs , lightly whisked
  • 8 sheets of phyllo dough
  • ¼ cup of olive oil , or more if needed


  • In a large skillet, heat 3 tablespoons of olive oil over medium heat. Saute the chopped onion, green onions, and garlic until they are softened and lightly browned (about 5 minutes).
  • Add the spinach and parsley to the skillet and continue sauteing until the spinach is wilted (about 2 minutes). Remove from heat and let it cool.
  • In a medium bowl, mix together the feta cheese, ricotta cheese, and eggs until well combined. Stir in the spinach mixture.
  • Lightly oil a 9-inch square baking pan and lay one sheet of phyllo dough in it. Brush the phyllo dough with olive oil.
