  • 1 1/2 sticks (12 tablespoons) unsalted butter , softened
  • Extra butter for greasing the pans
  • 3 cups water
  • 1 cup cool water
  • 2 cups chopped dates , pitted
  • 1 cup granulated sugar
  • 1/2 cup dark brown sugar , packed
  • 1/3 cup molasses
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon kosher salt
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves


  • Preheat the oven to 375Ëš F.
  • Grease 18 muffin cups with butter and line them with paper liners.
  • In a medium saucepan, bring approximately 3 cups of water to a boil over medium heat.
  • Place the chopped dates in a medium bowl and pour the hot water over them. Allow the dates to soften for about 10 minutes.
  • In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, granulated sugar, and brown sugar until creamy and fluffy for 5 to 8 minutes.
