  • 4 boneless , skinless chicken thighs
  • ¾ tsp kosher salt
  • ¼ tsp ground black pepper
  • 1 large onion , finely chopped
  • 4 cloves garlic , minced
  • ½ cup dry white wine
  • ½ cup chopped sun-dried tomatoes (drained from oil)
  • 1 cup low-sodium chicken broth
  • 1 ½ tsp Italian seasoning
  • 4 cups fresh baby spinach
  • 1 cup freshly grated aged Asiago cheese
  • 1 cup heavy cream
  • 1 tbsp freshly squeezed lemon juice
  • 1 (16 oz) package mini farfalle pasta
