  • Ingredients:
  • Unsalted butter , for greasing the pan
  • 8 to 10 chocolate chip cookies
  • 1/2 cup crushed chocolate sandwich cookies
  • 4 cups softened cookies and cream ice cream (1 quart)
  • 4 cups softened cookie dough ice cream (1 quart)
  • 8 ounces bittersweet chocolate , chopped
  • 3/4 cup heavy cream
  • 1/4 cup crushed chocolate chip cookies


  • Grease a 9-inch spring-form pan and line the bottom with parchment paper.
  • Place a layer of chocolate chip cookies on the bottom of the pan, then sprinkle with crushed sandwich cookies.
  • Scoop cookies and cream and cookie dough ice creams onto the crushed cookie layer, packing it tightly and alternating the scoops to create a marbled or checkerboard pattern.
  • Use an offset spatula to spread the ice cream and create a smooth top. Cover the pan with plastic wrap and freeze until firm, which should take about 2 to 2 1/2 hours.
  • Remove the cake from the pan by running a knife around the edge, then remove the spring-form pan and invert the cake onto a sheet of plastic wrap.
  • Remove the bottom of the pan and the parchment paper. Place a serving plate on the bottom of the cake and invert it once more, so the chocolate chip cookie layer is on the bottom. Keep the cake in the freezer until ready to frost.
  • In a heatproof bowl, place the chocolate. Heat the heavy cream in a small saucepan until simmering, then pour it over the chocolate and stir until smooth. Allow it to cool for 10 minutes before using.
