  • 1 lb baby Dutch yellow potatoes
  • 2 tbsp butter , separated
  • 8 fresh sage leaves
  • 1 tbsp Dijon mustard
  • 1 tsp olive oil
  • 1 tsp dried thyme
  • 1 medium onion , thinly sliced
  • 6 oz sliced chanterelle mushrooms
  • A pinch of salt
  • ¼ cup dry white wine
  • Salt and ground black pepper to taste
