Ingredients

  • Ingredients:
  • Baking spray
  • 1 cup of 60% cacao bittersweet chocolate morsels (such as Ghirardelli®)
  • ¾ cup of hot brewed coffee
  • 4 large eggs , at room temperature
  • ¾ cup of canola oil
  • ¾ cup of sour cream , at room temperature
  • 1 teaspoon of vanilla extract
  • 2 ⅓ cups of all-purpose flour
  • 2 cups of granulated sugar
  • ¼ cup of unsweetened cocoa powder
  • 1 teaspoon of kosher salt
  • 1 tablespoon of baking soda
  • ½ teaspoon of baking powder
  • 1 cup of finely chopped roasted chestnuts
  • 1 cup of powdered sugar
  • ¾ cup of salted butter , softened
  • 2 (3.5 ounce) cans of chestnut spread
  • 8 ounces of bittersweet chocolate , chopped
  • 1 ¼ cups of heavy whipping cream
  • 2 tablespoons of light corn syrup

Instructions

  • Preheat the oven to 350 degrees F (175 degrees C) and coat 3 (9-inch) round cake pans with baking spray.
  • In a medium bowl, combine chocolate morsels and hot coffee. Let it stand for 2 minutes, then stir until the chocolate is melted and smooth.
  • Whisk in eggs, oil, sour cream, and vanilla until well combined.
  • In a large bowl, whisk together flour, sugar, cocoa powder, salt, baking soda, and baking powder.
  • Stir in the egg mixture, then fold in the chopped chestnuts. Divide the batter equally between the prepared pans (about 2 cups per pan).
  • Bake in the preheated oven for 18 to 20 minutes, or until a wooden pick inserted in the center comes out clean.
  • Allow the cakes to cool in the pans for about 10 minutes, then invert them onto a wire rack to cool completely for about 1 hour. Trim the cooled cakes flat, if necessary.
  • In a large bowl, beat powdered sugar, butter, and chestnut puree with an electric mixer on medium-high speed until creamy, about 2 minutes.
  • Place one cake layer on a cardboard round that is the same size as the cake. Spread half of the filling onto the cake layer, slightly extending past the edges. Repeat this step with the second cake layer and remaining filling. Top with the final cake layer and smooth
