  • 2 cups half-and-half
  • 1 cup whole milk
  • 2 tablespoons cocoa powder
  • 1/2 cup sugar
  • 1/2 teaspoon flaky sea salt (plus additional for garnish)
  • 2 tablespoons cornstarch
  • 1 large egg
  • 3 egg yolks
  • 8 ounces bittersweet chocolate , melted (approximately 1 cup) (plus additional for garnish)
  • 1 teaspoon almond extract
  • 1 teaspoon extra-virgin olive oil (plus extra for drizzling)
  • 1 cup heavy cream
  • 1 teaspoon vanilla paste


  • In a medium saucepan, combine the half-and-half, whole milk, cocoa powder, 1/4 cup of sugar, and 1/4 teaspoon of salt. Whisk together.
  • Place the saucepan over medium heat and bring the mixture to a simmer. Whisk occasionally for 3 to 5 minutes.
  • Remove the saucepan from the heat.
