  • 3 dried Ancho peppers (, without seeds, toasted, and rehydrated)
  • 3 dried Guajillo peppers (, without seeds, toasted, and rehydrated)
  • 1 can (14.5 ounces) of Mexican-style Stewed Tomatoes
  • 1/4 teaspoon salt
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon dried oregano
  • 1/4 cup liquid from soaking the peppers
  • 1 small onion (, roughly chopped)
  • 1 tablespoon butter
  • 1 1/2 pounds 80/20 ground beef
  • 1 chopped onion
  • 1 Carroll Shelby Chili Kit (contains chili powder and cayenne only)
  • 1 Chili Bomb
  • 2 cans dark red kidney beans
  • 1 can stewed tomatoes
  • 30 ounces tomato juice
  • 24 ounces water
  • Salt and pepper to taste
  1. Step 1: Begin by preparing the chili bomb. In a small skillet over medium-high heat, stem, deseed, and toast the anchos and guajillos. Then, place the chiles in hot water for approximately 20 minutes to rehydrate.
  2. Step 2: Once the chiles are rehydrated, transfer them along with the soaking liquid, a roughly chopped onion, a can of Mexican style stewed tomatoes, salt, pepper, oregano, garlic powder, and chili powder to a blender. Blend and pulse until a smooth paste is formed. This mixture is your chili bomb and can be made in advance.
  3. Step 3: To prepare the chili, heat a large soup or stockpot over high heat. Melt the butter and add the ground beef and chopped onion. Brown the beef and sweat the onion together for about 7 minutes.
  4. Step 4: Add the proprietary chili powder and cayenne from the Carroll Shelby Chili Kit to the ground beef and onion. Stir constantly for approximately a minute to release the flavors of the spices.
  5. Step 5: Incorporate the prepared chili bomb paste into the pot and stir and fry for a few minutes.
  6. Step 6: Add the undrained kidney beans and the can of regular stewed tomatoes. Stir thoroughly.
  7. Step 7: Adjust the taste by adding tomato juice, water, salt, and pepper according to your preference.
  8. Step 8: Bring the mixture
