Method

  1. In a stockpot, bring water to a boil.

  9. Use the backside of a knife to smash the ginger on a cutting board. Add the onion and ginger to the broth.

  10. Add the chicken broth, rock sugar, fish sauce, pho ga seasoning, and salt to the broth.

  11. In a large pot, bring water to a boil.

  12. Add the rice noodles to the boiling water and cook for 2 to 3 minutes, until they are tender but still firm. Drain the noodles.

  13. Remove the skin from the cooled chicken and discard it, along with the bones. Keep the meat.
