  • 2 ounces of sugar (equivalent to 1/4 cup or 70g)
  • 1/8 teaspoon of kosher salt (Diamond Crystal); if using table salt , halve the volume or use the same weight
  • Optional: 1/8 teaspoon of almond extract


  • Combine cherry pits and cream in an airtight container.
  • Refrigerate the mixture for 4 to 24 hours.
  • Strain the cream into the bowl of a stand mixer with a whisk attachment.
  • Add sugar, salt, and almond extract (if desired) to the cream in the mixer bowl.
