Ingredients
  

  • 1 pound chicken tenders
  • 3 tablespoons BBQ rub seasoning
  • 3 tablespoons extra-virgin olive oil
  • 1 Maui or sweet onion , cut in half and sliced into 1/2-inch strips
  • 1 orange bell pepper , stemmed, seeded, and sliced into 1/2-inch strips
  • 1 red bell pepper , stemmed, seeded, and sliced into 1/2-inch strips
  • 1 poblano pepper , stemmed, seeded, and sliced into 1/2-inch strips
  • 1/2 teaspoon kosher salt (plus more to taste)
  • 1/2 cup crema
  • 1 minced chipotle pepper from canned chipotles in adobo , plus 1 tablespoon adobo sauce
  • 1/2 teaspoon garlic salt
  • 1/2 cup barbecue sauce
  • 3 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • Eight 6-inch flour tortillas
  • Avocado oil for toasting the tortillas
  • Lime wedges
  • Kosher salt
  • Avocado slices
  • 1/2 cup fresh cilantro leaves

  • In a medium bowl, marinate the chicken tenders by sprinkling the BBQ rub seasoning over them, ensuring they are well coated. Cover the bowl and refrigerate for 1 hour.
