  • 3 tbsp of extra-virgin olive oil , with additional for drizzling
  • 1/2 bunch of fresh sage
  • 1/2 bunch of fresh thyme
  • 1 large Spanish onion , sliced thinly
  • Kosher salt and freshly ground black pepper
  • 3 Granny Smith apples , peeled and diced
  • 1 1/2 cups of raw pecans
  • 2 eggs
  • 3/4 cup of heavy cream
  • 1 1/2 cups of low-sodium chicken stock
  • 5 cups of sourdough bread , torn into 1-inch pieces (crusts removed)
  • 1/4 bunch of fresh flat-leaf parsley , roughly chopped


  • Place a large saute pan over medium heat and pour in some olive oil. Add sage and thyme sprigs to the pan.
  • Heat the oil until the herbs start crackling and frying, infusing the oil with their flavors.
  • Remove the sage and thyme from the pan and set them aside on a paper towel to drain, if you want to use them as a garnish later.
  • Add onions to the pan and cook them over medium heat for about 15 minutes until they are caramelized.
  • Season the onions with salt and pepper.
  • Take the caramelized onions out of the pan and add the apples.
  • Crush the pecans and add them to the pan as well.
  • If needed, add more oil to the pan and season the mixture with salt and pepper.
  • Gently saute the pecans and apples until the pecans are lightly toasted and the apples are slightly cooked, which should take around 3 to 5 minutes.
  • In a large mixing bowl, whisk together an egg, some cream, chicken stock, and salt and pepper according to your taste.
  • Tear some sourdough bread into pieces and add it to the mixing bowl.
  • Also add the caramelized onions, apples, pecans, and chopped parsley to the bowl.
  • Using a wooden spoon, thoroughly mix the stuffing until all the ingredients are well combined.
