  8. Cover the pot again and cook, stirring occasionally and adding a splash of water if needed, until some of the potatoes fall apart and become creamy (about 25–30 minutes).

  9. Mix in lime juice, then taste the mixture and season with more salt if desired.

  10. Serve the dish with roti as a scoop for the various curries, chows, and chokas.
