Ingredients
- 3 tablespoons hot water
- ยฝ cup low fat or light mayonnaise
- 2 teaspoons lemon juice
- ยฝ teaspoon dry mustard
- 4 slices ham or Canada bacon
- 2 whole grain English muffins
- 4 medium eggs
- Parsley
Method
Step 1
Combine water with mayonnaise in double boiler. Stir for 5 minutes. (This can also be done in the microwave.)
Step 2
Stir in lemon juice and dry mustard. Set aside.
Step 3
Place large pan on burner. Add approximately 2 inches of water and simmer.
Step 4
Toast English muffins.
Step 5
Cook bacon. You can cook in the microwave, oven, or pan fry.
Step 6
Crack eggs into shallow saucer.
Step 7
Slip eggs carefully into water in large pan.
Step 8
Cover pan with lid and turn off heat.
Step 9
Cook three to five minutes depending on how firm you want the eggs.
Step 10
Lift poached eggs from pan with a slotted spoon. Drain excess water.
Step 11
Put a slice of meat on each muffin half.
Step 12
Place each egg on top of meat and top with 2 tablespoons of lemony mayonnaise.
Step 13
Garnish with parsley.
