  • 1 tablespoon of cumin powder
  • 1 teaspoon of cardamom powder
  • 1 teaspoon of cinnamon powder
  • 1 teaspoon of paprika
  • 1 teaspoon of nutmeg powder
  • 1 teaspoon of cayenne pepper
  • 1/2 teaspoon of cloves powder
  • 1/2 teaspoon of allspice powder
  • 1/2 teaspoon of coriander powder
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of turmeric powder
  • 1 1/2 cups of plain whole-milk yogurt
  • 3/4 cup of finely chopped fresh mint leaves
  • 1/4 cup of extra-virgin olive oil
  • 1 tablespoon of kosher salt
  • 1 tablespoon of sugar
  • 1 tablespoon of harissa
  • 4 cloves of garlic , smashed
  • 1 red onion , half finely chopped, half cut into 1to 2-inch pieces
  • 1 lemon , halved
  • Freshly ground black pepper
  • 2 pounds of boneless , skinless chicken breasts, cut into 1to 2-inch cubes
  • 1 bell pepper , cut into 1to 2-inch pieces

Instructions
 

  • Ras al hanout instructions:
  • Combine cumin, cardamom, cinnamon, paprika, nutmeg, cayenne, cloves, allspice, coriander, pepper, and turmeric in a jar with a lid.
  • Shake the jar to mix the spices.
  • Take out 1 tablespoon of the spice mixture and place it in a large bowl.
  • Store the remaining spice mixture in the jar for up to 3 months.
  • Chicken instructions:
  • In the bowl with the ras al hanout, add yogurt, mint, oil, salt, sugar, harissa, garlic, finely chopped onion, juice from half of the lemon, and about 12 turns of pepper.
  • Mix everything together to combine.
  • Add the chicken to the bowl and coat it evenly with the spice mixture.
  • Cover the bowl and let the chicken marinate in the refrigerator for at least 3 hours or overnight.
