Method

  1. Heat a large skillet over medium-high heat.

  2. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, for about 5 to 7 minutes.

  3. Drain and discard any excess grease.

  4. Reduce the heat to medium and add green pepper, apple cider vinegar, Dijon mustard, garlic, parsley, and salt. Mix everything well.

  5. In a small pot, bring 2/3 cup of water to a boil and add the dates. Boil them just long enough to soften, which should take around 30 to 60 seconds.

  6. Remove the dates from the pot and set aside. Keep 2 tablespoons of the cooking liquid.

  7. Place the softened dates into a food processor or blender along with the tomato sauce and tomato paste. Blend everything together until smooth.

  8. Add the pureed date mixture along with the reserved cooking liquid to the beef mixture.

  9. Prick a potato several times with a fork or knife. Microwave on High power until soft, for about 5 to 7 minutes. Repeat this step for the remaining potatoes.

  10. Serve the Sloppy Joe mixture on top of the cooked potatoes.
