  • 3 tbsp of vegetable oil
  • 2 green onions (, thinly sliced)
  • 2 cloves of garlic (, minced)
  • 1 garlic scape (, chopped)
  • ½ pound of extra-firm tofu (, cubed)
  • ¼ cup of fermented black beans
  • ¼ cup of mushroom oyster sauce
  • 1 cup of water
  • 1 tbsp of rice vinegar
  • 1 tbsp of tamari sauce
  • ¼ tsp of ground ginger
  • 2 cups of dried shiitake mushrooms
  • ½ pound of fresh spinach (, chopped)
  1. Heat vegetable oil in a wok or large skillet over medium-high heat.
  2. Add green onions, garlic, and garlic scape to the wok and cook until vegetables have softened (around 30 seconds), stirring continuously.
  3. Stir in toru, black beans, mushroom oyster sauce, and half of the water.
