Method

  1. Adjust the oven rack to be about 6 inches away from the heat source and preheat the broiler.

  2. Line a baking sheet with aluminum foil and place the tomatillos on it, cut-side up.

  3. Broil the tomatillos in the preheated oven for about 20 minutes, or until they turn a dark brown color and become caramelized. Once done, remove from the oven and let them cool slightly.

  4. In a small skillet, toast the chile de arbol peppers over medium heat, turning them once, until they start to lightly brown in spots (be careful not to char them). This should take about 3 minutes. Transfer the peppers to a plate.

  5. While the tomatillos are cooling, heat oil in a large skillet over medium heat. Add the mushrooms and cook, stirring frequently, until they have softened, approximately 5 minutes.

  6. In a blender, combine 3 of the tomatillos and the arbol chiles. Blend until smooth. Pour this mixture over the mushrooms in the skillet.

  7. Add the remaining tomatillos from the baking sheet, along with the roasting juices, to the skillet. Mix everything together well and cook over low heat until the mushrooms have further softened, which should take about 5 to 8 minutes. Season with salt.

  8. Warm the corn tortillas in a skillet.

  9. Divide the mushroom mixture evenly among the tortillas and top
