Ingredients
  

  • 2 tbsp of olive oil
  • 2 tbsp of lemon juice
  • 1 garlic clove
  • 1 tsp of Dijon mustard
  • tsp of sea salt
  • Freshly ground black pepper (to taste)
  • 2 pounds of small yellow potatoes
  • 12 ounces of fresh green beans
  • Kernels from 1 ear of corn
  • Heaping ½ cup of thinly sliced red onion
  • 3 tbsp of vegan sour cream
  • 3 tbsp of chopped chives
  • Red pepper flakes (to taste)

Instructions
 

  • In a large mixing bowl, combine the olive oil, lemon juice, garlic, mustard, 1½ teaspoons of salt, and a few grinds of pepper. Whisk until well mixed.
  • Place the potatoes in a large pot and cover them with cold water, leaving about 1 inch of water above the potatoes. Stir in the remaining 1 teaspoon of salt. Bring the water to a boil, then reduce the heat and let it simmer, uncovered, until the potatoes are tender when pierced with a fork. This usually takes about 10 to 14 minutes.
  • Drain the potatoes and pat them dry. If any of the potatoes are large, cut them in half. Add the potatoes to the bowl with the dressing and toss them until they are coated.
  • Fill the pot with water again and bring it to a boil. Keep a bowl of ice water nearby. Add the green beans to the boiling water and blanch them for 2 minutes. Then, drain the beans and immediately transfer them to the ice water to stop the cooking process. After 1 minute, drain the beans and place them on a kitchen towel to dry. Add the beans to the bowl with the potatoes, along with the corn and onion. Toss everything together. If desired, season with more salt and pepper to taste. Transfer the mixture to a platter.
