  • ¼ cup of tamari
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of maple syrup
  • 1 tablespoon of extra-virgin olive oil
  • ½ teaspoon of cumin
  • Heaping ½ teaspoon of smoked paprika
  • Freshly ground black pepper , to taste
  • 8 ounces of shiitake mushrooms
  • 2 tablespoons of extra-virgin olive oil
  • 1 tablespoon of tamari
  • ¾ cup of unsweetened coconut flakes
  • ¾ tablespoon of tamari
  • Scant ½ tablespoon of maple syrup
  • ¼ teaspoon of smoked paprika

Instructions
 

  • Preheat the oven to 425°F and prepare a baking sheet by lining it with parchment paper.
  • Put the steamed tempeh in a baking dish measuring 8x8 or similar size.
  • In a small bowl, whisk together tamari, rice vinegar, maple syrup, olive oil, cumin, paprika, and a sprinkle of pepper to make the marinade.
  • Pour the marinade over the tempeh and let it sit for 15 minutes.
  • Arrange the tempeh strips on the prepared baking sheet and bake for 8 to 10 minutes, or until they become crispy and slightly charred on the edges.
