  • 1/2 cup granulated sugar
  • 1/2 cup dried cranberries
  • 2 sprigs of rosemary
  • 1 cinnamon stick
  • 2 navel oranges
  • 1 cup halved seedless red grapes
  • 1 cup halved seedless green grapes
  • 1 cup pomegranate seeds
  • 2 ripe pears (preferably Bartlett or Comice) , cored and cut into bite-size pieces
  • 2 sweet , crisp apples (such as Honeycrisp or Pink Lady), cored and cut into bite-size pieces


  • In a small pot, combine the sugar, dried cranberries, rosemary, cinnamon stick, and 1/2 cup of water.
  • Use a vegetable peeler to peel a large strip of zest from one of the oranges. Add the zest to the pot.
  • Place the pot over medium heat and bring the mixture to a simmer. Stir to dissolve the sugar and press the solids down into the mixture.
  • Continue cooking until the mixture slightly thickens, which should take about 5 minutes.
  • Turn off the heat and allow the syrup to cool to room temperature.
  • Remove the rosemary, cinnamon stick, and orange zest from the pot and discard them.
  • Strain the syrup through a sieve into a small bowl, and set it aside.
  • In a large bowl, place the cranberries.
  • Use a paring knife to remove the remaining zest from the oranges, following the shape of the fruit.
  • Carefully cut between the sections of the oranges to release whole segments, and add them to the bowl with the cranberries.
