Getting Started: The Foundation

Just like any house needs a strong foundation, your sugar-cookie Easter bunny house will need a sturdy base. Start by making a batch of your favorite sugar-cookie dough. Roll it out and cut out the necessary shapes for your house โ€“ walls, roof, and doors. As you assemble the pieces, think of it as building a little home for your Easter bunny friends.

Decorating Delights

Once your sugar-cookie house is baked and cooled, itโ€™s time for the real fun to begin โ€“ decorating! Think of the decorations as the paint and wallpaper that bring your bunny house to life. Use colorful icing to pipe on windows, doors, and even flower pots. Add some edible glitter or sprinkles for that extra touch of magic. Get creative and let your inner artist shine.

Sweet Landscaping

No house is complete without a beautiful landscape, and your sugar-cookie Easter bunny house is no exception. Create a garden around your house using green-tinted coconut flakes as grass. Add some colorful candy flowers or edible sugar flowers for a touch of whimsy. You can even use pretzel sticks to make a cute picket fence. The possibilities are endless!

Ingredients
ย ย

  • 4 1/4 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon fine salt
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 3 sticks unsalted butter , at room temperature
  • 1 cup granulated sugar
  • 1/2 cup confectioners sugar
  • Sanding sugar (optional)
  • 2 cups Royal Icing (recipe follows)
  • 1 cup Coconut Grass (recipe follows)
  • Easter candy (such as pastel jelly beans , small foil-wrapped chocolate eggs and bunnies, small peanut butter cups, colored mini-marshmallows, marshmallow chicks, sanding sugar)
  • 2 1/4 cups confectioners sugar
  • 2 tablespoons meringue powder
  • Green food coloring
  • 1 cup lightly-packed shredded sweetened coconut

Instructions
ย

  • To make the dough, start by whisking together the flour, baking soda, and salt in a medium bowl. In a separate small bowl, mix the eggs and vanilla using a fork.
  • In the bowl of a stand mixer (or using a hand mixer), beat the butter, granulated sugar, and confectioners' sugar on low speed until the butter has combined with the sugars. This should take about 30 seconds with a stand mixer or 2 minutes with a hand mixer. Increase the speed to medium and beat until the mixture is slightly creamy, which should take about 1 minute with a stand mixer (or 3 minutes with a hand mixer), stopping halfway to scrape the bowl.
  • Reduce the speed to low and slowly add the egg mixture, beating until combined. Gradually add the flour mixture, about a heaping cup at a time, in 3 additions. Stop a few times to scrape the bowl and beaters (if using a hand mixer, increase the speed as the dough thickens to keep the beaters spinning). Once all the flour is incorporated, increase the speed to medium (or higher with a hand mixer) and beat until the dough is very smooth, about 2 minutes with a stand mixer (or 5 minutes with a hand mixer).
  • Turn the dough out of the bowl and shape it into a ball. Divide the dough into 3 equal pieces, each weighing about 13 ounces. Shape each piece into a 6-inch square and wrap them individually
