  • 1 lb. dried pinto beans
  • 2 slices of thick-cut bacon
  • 1 small onion (, quartered)
  • 2 sprigs of fresh oregano
  • 1 bay leaf
  • 2 tsp. ground cumin
  • 2 tsp. smoked paprika
  • Kosher salt
  • 1 tbsp. extra-virgin olive oil
  • 2 slices of thick-cut bacon (, cut into 1/2 strips)
  • 1 small onion (, chopped)
  • 2 tsp. ground cumin
  • 2 tsp. smoked paprika
  • 2 cans (15.5-oz.) pinto beans (, drained and rinsed)
  • 1/2 cup of chicken broth or water
  • 2 sprigs of fresh oregano
  • Kosher salt
  1. Place the beans in a colander and rinse them with cold water. Remove any broken beans or debris. Transfer the beans to a large pot.
  2. Optional: If desired, soak the beans overnight by covering them with 4 inches of cold water and placing them in the refrigerator for up to 12 hours. Drain the beans and return them to the pot.
  3. Add enough cold water to the pot to cover the beans by 2 inches. Add bacon, onion, oregano, and bay leaf. Bring the beans to a rolling boil and let them boil on high for 10 minutes. Then, reduce the heat to a simmer. Stir in cumin and paprika and cover the pot with the lid slightly ajar. Cook, stirring occasionally, until the beans are tender. This will take approximately 1 to 2 hours, depending on whether the beans were soaked.
  4. Once the beans are tender, remove the onion, oregano, and bay leaf. Coarsely chop the bacon, return it to the pot, and season the beans with salt to taste. Serve.
  5. In a large skillet or pot over medium heat, heat the oil. Add the bacon and onion and cook until the onion is translucent and the bacon is beginning to crisp. This will take about 6 minutes.
  6. Add cumin and smoked paprika and cook for 1 minute until fragrant. Add the beans and chicken broth or water and stir to combine
