  • 2 ½ cubes of vegetable bouillon (or adjust amount to taste)
  • 2 cups of dry lentils
  • 5 small carrots , peeled and diced
  • 2 medium potatoes , peeled and diced
  • 3 teaspoons of ground cumin (or adjust amount to taste)
  • 1 teaspoon of ground coriander
  • 1 tablespoon of olive oil
  • 1 small onion , diced
  • 4 cloves of garlic , minced
  • ½ can (about 6 ounces) of tomato paste (or adjust amount to taste)
  • ½ teaspoon of sea salt (or adjust amount to taste)
  • ½ teaspoon of freshly ground black pepper (or adjust amount to taste)
  • ½ package (about 8 ounces) of fresh spinach , torn

Instructions
 

  • In a slow cooker set on High, dissolve vegetable bouillon in warm water.
  • Add lentils, carrots, and potatoes to the slow cooker.
  • Heat a medium saucepan over medium heat.
  • Cook and stir cumin and coriander in the saucepan until fragrant, approximately 20 seconds.
