  • 1 1/2 tsp pumpkin pie spice
  • 1 1/2 tsp ground cumin
  • Kosher salt and freshly ground black pepper
  • 1 lb pork tenderloin , trimmed
  • 2 tbsp olive oil
  • 1/4 tsp ground ginger
  • 3 medium carrots , sliced 1/4 inch thick on the bias
  • 1/2 lemon , thinly sliced and quartered
  • 1 cup couscous
  • 1/2 cup chopped dried apricots
  • 2 cups baby spinach , lightly packed


  • In a small bowl, combine the pumpkin pie spice, 1 teaspoon of cumin, 2 teaspoons of salt, and a few grinds of pepper.
  • Rub the spice mixture all over the pork tenderloin.
  • In a large skillet, heat 1 tablespoon of oil over medium-high heat until very hot.
  • Place the pork tenderloin in the center of the skillet and cook for about 5 minutes, flipping occasionally, until browned on all sides.
  • While the pork is cooking, toss together the ginger, carrots, lemons, remaining 1/2 teaspoon of cumin, and 1 teaspoon of salt in a small bowl.
