  1. Cut the skinless salmon fillet into 1 pieces and place them in a large bowl. Season the salmon with 1 tsp. Diamond Crystal salt or ½ tsp. Morton kosher salt.

  2. Trim the tough stems off the mixed mushrooms (shiitake, oyster, maitake, and/or nameko). Slice the shiitake mushrooms ¼ thick and tear the oyster, maitake, and/or nameko mushrooms into small clusters. Add them to the bowl with the salmon.

  3. Trim the root end from the medium onion, peel off the skin, and coarsely chop the onion. Transfer the chopped onion to a medium bowl.

  4. Smash, peel, and coarsely chop the garlic cloves. Add them to the bowl with the onion.

  5. Use a spoon or vegetable peeler to remove the skin from a 3 piece of ginger. Thinly slice the ginger into rounds and add them to the bowl with the onion.

  6. Cut the red or green Thai or serrano chiles in half lengthwise. Place them in a small bowl. Use 1, 2, or 3 chiles depending on your desired level of spiciness.
