Ingredients

  • Rotisserie kit for your grill
  • Whole chicken
  • Lemon, apple, or onion (to fill the cavity of the chicken)
  • Olive oil
  • Salt and pepper
  • Optional: other favorite seasonings such as rosemary or thyme
  • Meat thermometer

Method

Step 1

Before You Begin:
Follow the directions included with your rotisserie kit to set up the rotisserie rod on your grill. This is usually a simple operation requiring a screw driver and about 10 minutes of your time.

Step 2

Empty out the cavity of the chicken, then fill it with all or part of your choice of lemon, apple, or onion. This will go a long way to help hold the chicken in place on the rotisserie rod.

Step 3

Secure the chicken onto the rotisserie rod. Push the rod through the center of the chicken, and use the forks on the rod to firmly secure the wings and legs of the chicken to the rod as well. Turn the rod back and forth to ensure nothing moves or falls free.

Step 4

Roast That Bird:
Bring the temperature in your grill to about 350 degrees. Keep a close eye on the whole operation for the first few minutes, to be sure that the rod is spinning properly and that the chicken is secure. After that, check back periodically.

Step 5

After about 20 minutes, brush your chicken evenly with olive oil, and rub with your seasoning blend (salt and pepper, plus any other flavors you choose to add.)

Step 6

The chicken will take about 30 minutes per pound to cook. Watch closely towards the end of the cook time.

Step 7

When the skin begins to brown and crisp, use a meat thermometer to test the internal temperature. Remove the chicken when the internal temperature reaches 165-175 degrees.

Step 8

Allow chicken to rest five minutes. Carve and enjoy!
