  • 1 tsp of vegetable oil , or as desired
  • 1 and 2/3 cups of cold water , divided
  • 7 tsp of plain gelatin
  • 2 and 1/3 cups of granulated sugar
  • 3 tbsp of freshly squeezed lemon juice (strained)
  • 4 tsp of rose water
  • 2 drops of red food coloring
  • 1 tbsp of cornstarch , or more if needed


  • Grease an 8-inch square pan using vegetable oil.
  • In a small bowl, pour 2/3 cup of water. Sprinkle gelatin on top and let it soften for about 15 minutes.
  • In a saucepan over medium heat, combine the remaining 1 cup of water, sugar, and lemon juice. Stir until the sugar dissolves and bring it to a boil.
  • Once boiling, cover the saucepan and let the syrup boil for 3 minutes.
  • Remove the cover and attach a candy thermometer to the side of the saucepan. Continue cooking the syrup until it reaches a temperature of 238 degrees F (114 degrees C), which takes approximately 5 minutes.
  • Take the saucepan off the heat and carefully stir in the gelatin mixture until it completely dissolves. Add rose water and red food coloring to the mixture.
  • Pour the syrup into the greased pan and let it stand at room temperature until it gels, which usually takes about 4 hours.
  • Cover the pan with plastic wrap and refrigerate for 8 hours or overnight.
  • Cut the gelled mixture into 1-inch squares and lightly dust them with cornstarch.
  • Note: Rose water can be found at Middle Eastern and specialty food stores.
