Ingredients
  

  • 1 lb zucchini
  • 2 tsp extra-virgin olive oil
  • 1 tsp Italian seasoning
  • ½ tsp sea salt
  • ¼ tsp garlic powder
  • Lemon wedges
  • Crumbled feta cheese
  • Fresh herbs
  • Freshly ground black pepper

Instructions
 

  • Preheat the oven to 425°F and prepare a baking sheet by lining it with parchment paper.
  • In a big bowl, combine the zucchini, olive oil, Italian seasoning, salt, garlic powder, and a few twists of pepper.
  • Evenly spread the seasoned zucchini on the prepared baking sheet.
  • Roast the zucchini in the oven for about 15 to 20 minutes, or until the edges turn golden brown.
  • Take the baking sheet out of the oven and transfer the roasted zucchini to a serving dish.
  • Squeeze some lemon juice over the roasted zucchini.
  • Optional: If desired, sprinkle the zucchini with cheese and herbs.
  • Serve and enjoy!
