Ingredients
- 1 lb zucchini
- 2 tsp extra-virgin olive oil
- 1 tsp Italian seasoning
- ½ tsp sea salt
- ¼ tsp garlic powder
- Lemon wedges
- Crumbled feta cheese
- Fresh herbs
- Freshly ground black pepper
Instructions
- Preheat the oven to 425°F and prepare a baking sheet by lining it with parchment paper.
- In a big bowl, combine the zucchini, olive oil, Italian seasoning, salt, garlic powder, and a few twists of pepper.
- Evenly spread the seasoned zucchini on the prepared baking sheet.
- Roast the zucchini in the oven for about 15 to 20 minutes, or until the edges turn golden brown.
- Take the baking sheet out of the oven and transfer the roasted zucchini to a serving dish.
- Squeeze some lemon juice over the roasted zucchini.
- Optional: If desired, sprinkle the zucchini with cheese and herbs.
- Serve and enjoy!
