  • 2 teaspoons extra-virgin olive oil
  • 1 medium shallot
  • 2 garlic cloves
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • Pinch Pinch of cayenne
  • 1 tablespoon vegan Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon grated beet
  • 1/4 cup walnuts
  • 1 cup cooked black beans
  • 3/4 cup cooked red quinoa
  • Heaping 1/4 teaspoon sea salt and fresh black pepper
