  • 1 stick of butter (1/2 cup) , at room temperature
  • 1/2 teaspoon of vanilla extract
  • 3 large eggs
  • 1 cup of granulated sugar
  • 2/3 cup of canned pumpkin
  • 1 teaspoon of lemon juice
  • 3/4 cup of all-purpose flour
  • 1 teaspoon of ground ginger
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder
  • 2 teaspoons of ground cinnamon
  • 1 cup of finely chopped pecans
  • 1 cup of confectioners sugar , plus additional for sprinkling.
