  • 1 cup chicken broth
  • 2 lemons , zested and juiced
  • 2 cups shredded cooked chicken
  • 3 cups baby spinach
  • ½ cup shredded fontina cheese
  • ¼ cup freshly grated Parmesan cheese , plus extra for garnish
  • 2 tbsp chopped fresh flat-leaf parsley , plus extra for garnish
  • ¾ tsp black pepper
  • ½ tsp table salt
