To roll, cut, and bake the cookies:
Preheat the oven to 350 degrees F and line 2 baking sheets with parchment paper.
Dust a work surface with flour and roll the dough into a slightly thicker than 1/8 inch square.
Use a 4-inch champagne flute cookie cutter to cut out 30 cookies, re-rolling the dough scraps as needed.
Divide the cookies between the baking sheets and refrigerate until chilled.
