Ingredients
  

  • 3 tablespoons of low-sodium soy sauce
  • 2 tablespoons of rice wine vinegar
  • 1 tablespoon of sesame oil
  • 2 teaspoons of honey
  • 2 teaspoons of cornstarch
  • 1 teaspoon of Sriracha sauce
  • 2 tablespoons of peanut oil
  • 2 stalks of celery , thinly sliced diagonally
  • 1 medium onion , cut into 1/2-inch wedges
  • 3/4 pound of shiitake mushrooms , trimmed and cut into 1/4-inch slices
  • 1/4 pound of beech mushrooms , trimmed
  • 6 green onions , cut into 2-inch pieces, whites and greens separated and divided
  • 1/4 pound of enoki mushrooms , trimmed
  • 2 cloves of garlic , minced
  • 1 teaspoon of freshly grated ginger

Instructions
 

  • Prepare the sauce: Combine soy sauce, vinegar, sesame oil, honey, cornstarch, and Sriracha in a small bowl, whisking them together.
  • Make the stir-fry: In a large wok, heat peanut oil over high heat. Add celery and onion, stirring constantly, and cook for 3 to 4 minutes. Next, add shiitake mushrooms, beech mushrooms, and the white parts from the green onions. Continue stirring constantly and cook for another 3 to 4 minutes.
  • Include enoki mushrooms, the green parts from the green onions, garlic, and ginger. Stir-fry for 2 minutes. Then, move the vegetables to one side of the wok.
  • Recombine the sauce ingredients by whisking them again. Pour the sauce into the empty section of the wok. Stir the vegetables into the sauce and cook until the sauce thickens slightly, approximately 1 minute. Remove from heat and serve immediately.
