  • 1.5 pounds of assorted mushrooms
  • 0.75 tsp of sea salt
  • A pinch of freshly ground black pepper
  • 1 medium yellow onion
  • 2 cloves of garlic
  • 1 tbsp of fresh thyme leaves
  • 1.5 cups of uncooked Arborio rice
  • 0.67 cup of dry white wine
  • 5 cups of warmed vegetable broth
