Ingredients
  

  • Sweet potato , peeled and cut into cubes
  • 2 packages of dry corn bread mix , 8 ounces each
  • 1 package of ground spicy pork sausage , 16 ounces
  • 3 tablespoons of butter
  • 1 stalk of celery , chopped
  • 1 bunch of green onions , chopped
  • 1 large onion , chopped
  • ¼ bunch of fresh parsley , chopped
  • 2 cans of oysters , 8 ounces each, liquid reserved

Instructions
 

  • In a medium saucepan, place the sweet potato and add enough water to cover it.
  • Bring the water to a boil and let the sweet potato cook for about 15 minutes or until it becomes tender.
  • Drain the water and mash the sweet potato. Set it aside for later use.
  • Follow the instructions on the package of dry cornbread mix and prepare it accordingly.
