Method

  1. Thaw the raw jumbo shrimp by covering them with 3 to 4 cups of water. Reserve the water.

  2. Thaw the raw jumbo scallops by covering them with about 2 cups of water. Reserve the water.

  3. To brine the raw seafood, cover the shrimp and scallops with water. Add 1 tbsp salt, 1 tbsp sugar, 1 tbsp granulated garlic powder, 1/2 tbsp granulated onion powder, and ice cubes. Aim for a temperature between 35 to 42. Cover and shake well. Place in the fridge for 30 minutes to 1 hour, shaking occasionally.

  4. Peel the shrimp, reserving the shells, tails, legs, veins, and shrimp water. Place all leftovers back into the shrimp water.

  5. Pour the scallop water into the shrimp water. Add 1 1/2 tsp garlic sea salt and 1/2 tsp white pepper to create the seafood stock. Bring to a boil and simmer for 15 minutes. Be cautious as it may boil over with the sea salt addition. Turn off the heat.

  6. Cut the jumbo raw scallops into halves or quarters, depending on their size.

  7. After the stock has boiled, strain it through a fine mesh strainer and return the broth to the pot. Discard the shells and any residuals in the strainer.

  8. Reheat the clear seafood stock to a steady boil.
