  • 2 tbsp of olive oil (separated)
  • ¾ tsp of salt (divided)
  • ¾ tsp of ground black pepper (divided)
  • 1 pound of sweet potatoes , peeled and cut into 1-inch wedges
  • 1 pound of Brussels sprouts , trimmed and halved
  • 4 bone-in chicken thighs
  • ¼ cup of toasted pecans , chopped
  • ¼ cup of dried cranberries , chopped

Instructions
 

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Line a 10x15-inch baking pan with foil.
